I love beets and the greens. In this case the red.

It matures in about 45 days. Harvest beets when they are about 3 inches. But let some go and harvest the leaves over a whole season. I plant my beets 3-4 inches apart. Each beet seed is actually a pod so thin to 1 plant per space.
